Cooking On The Road

As much as I love eating out, cooking for myself and others is a great joy too. If I do say so myself, I’m a really good cook. Probably goes with being a really good eater. Honestly, when we eat at a restaurant, a lot of times we say to ourselves ‘We could have made something better than this!’

Now, cooking in my beautiful, fully equipped kitchen at home is one thing, but if I’m traveling and still want to whip something up it has to be quick, easy and taste great. The folks at HostelBookers have the right idea with their latest contest. HostelBookers is in the process of putting together a Backpacker’s Recipe Guide. They’re looking for the best recipes with less than 5 ingredients that can be made in any hostel kitchen.

My entry is something that I make on a regular basis at home. Feel free to substitute as you like; change up the bread or the spread, use blanched asparagus in place of avocado and whatever type of cheese you prefer – just make sure it’s a melty one. This can be made under a broiler or just in an oven or even a toaster oven if that’s all that’s available. I’d probably avoid using a microwave though.

Open-Faced Avocado And Cheese Sandwich

Ingredients:

2 slices grainy, wheat bread

Catalina salad dressing

1 avocado, peeled and sliced into 8 slices

sliced Swiss cheese

Toast the bread. Spread with the catalina dressing, being sure to cover the entire surface. Lay the avocado slices on top; 4 slices per piece of bread. Cover with the swiss cheese. Place on a baking sheet, or sheet of aluminum foil and slide under the broiler. Broil for about 4 minutes, checking often to make sure the cheese melts but does not burn. Remove when cheese is bubbly and beginning to brown.

Serves 2 as a snack or light lunch. Serves 1 avocado-loving hungry person.
